The directions on jello say stir mix and one cup boiling water, when disolved add one cup cold water.

Why not start with two cups of boiling water and be done with it......

I haven't heard that routine in a long time!

Because the hot water is to make sure the mixture disolves completly, then the cold water starts the "jell" process. you could use 2 cups of hot water, but if would take much longer for it to be ready to eat.

I'm not in a hurry.

They used to recommend, for very fast setting jell-o, replace the cold water with ice.
